I like to cook but feel that working at as a chef really not my thing, and I got 2 years of experience in 4 different places also an internship in 5 stars hotel. The one place that I really dislike though is one where we didn't really work just reheat stuff 😄 for me personally cooking is about creativity and reheating frozen pre packaged stuff ain't it

My struggle lately is that I've been in the industry for a while, I've gotten good at it, my coworkers and managers say I'm doing great, but I hate it now. It doesn't make me feel good to hear compliments about how I do now because I'm just not fulfilled, I'm trying to find a job in a different field but I feel stuck because employers look at all my cooking experience on my resume and see nothing else. Don't stay in it if you don't enjoy the vibe, you'll just end up in my position. End rant.

Restaurants are not fun especially post COVID with everything being understaffed, even though I work as a dishwasher in a restaurant I’ve seen and experienced the toll it takes on people which sometimes does lead to deep depression and substance abuse. If you really want to go into the restaurant scene I’m not stopping you because if you don’t do it who will ? Be safe and remember these things

It’s the atmosphere most head chefs and/or kitchen managers willingly create that makes the job terrible. Prepare to be: Talked down to Insulted Sexually harassed ( male or female ) Over worked No breaks Used as an emotional punching bag The list goes on forever, but after 15+ years in the industry I can say with full confidence the job is great your co-workers and managers can and will be abusive. It the kitchen atmosphere. And some psychopaths thrive in it.

as a chef de partie, the kitchen is VERY hot, the hours are long, the work is hard and the days are long, your legs will hurt and you will probably find yourself drinking a lot of coffee, most chefs I've known smoke cigarettes on their breaks, or in between the first sitting and second sitting, Decent job if you enjoy it, wouldn't recommend if ur not willing to get your hands covered in burns or cuts, or dirty with all sorts of stuff, good luck future chefs

If you like a noisy, hot, stressful environment with no guaranteed breaks or lunch (If you do get to eat lunch you're defiantly not eating between 11:00-1:00) then sure go for it. If you want to get a decent look at what it's like to work in a kitchen before doing all the training, try a dishwashing job. It's a very similar work environment except for your cleaning dishes instead of cooking. Don't think cleaning dishes isn't fast pace either. Unless you want to leave 3 hours after everyone else.

Pay me more, give me a real life and a fair schedule and I won't be scared. The hostelry asked during the pandemic "save the restaurants" the same one that later pays you as little as possible and exploits you like if you were nothing and you have no right to a life. Today even working in a factory is better.

@Musical Sounds If a business is understaffed, they're not paying people enough to see working for them as a benefit. It's simple supply and demand. Also your point is assuming that all "chefs" are culinary chefs who have gone to school. In reality, very few people working in restaurants are culinary chefs. The great majority work as line cooks and are paid less than 30k per year. In all likelihood, the only one making 60k a year at the OP's restaurant is himself, if he even has a degree in the first place to be considered a culinary chef. What country by the way? It always seems like whenever someone says "in my country" without mentioning the country they are talking complete lies.

Vor 4 Tage
Musical Sounds
Musical Sounds

@PaleGhost69 that's really just assuming the country. In my country chefs get paid pretty well enough to live a comfortable life. For example in my country it's the fastest way to get a job and finish school and get a degree is cooking it requires only 4 years including 2 years work experience. You earn around 50-60k$/y in my conutry.

Vor 4 Tage
Dean
Dean

@PaleGhost69 I feel like line cooks get paid scraps universally. It's a tough job and requires more than an 8 hour shift, so being paid very little will turn people off from working either way. Now, this is not the fault of the head chefs in any way, but the restaurant owners. The problem is deeper than just the roots. It's the soil.

Every restaurant I've worked in, in my town, all the head chefs have been on an insane amount cocaine... they all worked insane hours, and "caffeine stopped working for them". But especially working in bars and pubs; it's a big party scene amongst the staff. Mind you I've worked at pubs, bars, chains, fancy restaurants, even McDonald's, and this rang true every time without fail. I agree, first hand experience > school. My sister started as a dishwasher and worked her way up to head chef (no exception to the cocaine rule). She had no prior kitchen experience other than McDonald's, and no culinary school experience. You just need to want it, be available to stay late & come in early, take shifts and come in when called, be a good worker, and have drive. I think it's entirely possible to work in a kitchen not on drugs, but even most of the kitchen staff smoked weed. 😂 So take this for what you will (I live in Canada, btw).

I found restaurant/culinary work to be very rewarding, but it is a young person's game. At 62, my knees ache and no way could I go back to it, much as I love it. I didn't mind the so-called down sides because I was out to prove something to myself, and I did. It is sooooo rewarding to see people come back daily or weekly because they like the food you make. The camaraderie of the staff was a treasured aspect of my experience as well. And it se me up so that, yes, I can cook the food *I* want to eat and serve to my family and friends. A culinary career permitted me to go work at a hotel in the USVI in my twenties and I am forever grateful for the experience. I did catering, public and private, and through that I met some fantastic people.

I loved my first job as a busboy. It was so energetic and fun. I was running around, burning 5000 calories a day between work and my workout. That meant I got to eat a bunch more food every day and the food the chefs cooked me at the end of my shift was, without a doubt, the best. Nothing tastes better than a plate of skin-on salmon or some steak with French fries and some mashed potatoes and some garlic green beans after a long shift. I genuinely miss that job.

From my experience being a chef I can tell you this..if you have the passion for it it’s the best job you can have, ideally the enjoyment will come from higher end establishments that are often times run and organized a lot better then smaller not as upscale restaurants. You will learn more working in that type of setting. The work is often hard and the financial compensation isn’t what it should be considering the amount of stress and high pressure situations not to mention all the work hazards that you face day in and day out. And one thing I will say is this cooking and being a chef isn’t for everyone and if someone who knows what they’re are talking about tells you this in the beginning stages of your career in the culinary industry don’t be offended just know that they’re looking out for your best interests even if it comes off harsh. And another thing is being a cook or chef is a very giving and selfish profession..time for friends and loved ones goes away a lot of the times. All I can say is it takes a special person to do that work and you’ll know deep inside if your made for it..
