As a HongKongese, I would like Uncle Roger explain more about the unique way of Stephen Chow used to cook rice. It is called “Bo Jai Fan”煲仔飯. Literally means rice cooked in small pot. The pot is typically made by clay and cooked with charcoal fire. The finished rice will have a very specific aroma and a burnt crust in the bottom , which considerably the best part of the rice. They usually served with assorted meat of your choice on top, so the fat and aroma will zip down to the rice. Don’t ask for a vegan dish please coz we Hong Kong people also allergic to vegan. So weak…. If you want to get this Bo Jai Fan dish in Hong Kong, just visit Temple Street in Yau Ma Tei area, easily accessible by tube. And you will found in between all those prostitution and brothel, there are also quite some shop selling Bo Jai Fan with other seafood dishes.

In addition, the previous skill used by the bad guy is a reference to 降龍十八掌 (The 18 Dragon-Subduing Palms), from the same novels, also from the Beggar's Sect. Interestingly, while the 18 Dragon-Subduing Palms is usually considered harder to master compared to the Dog-Beating Staff, the symbol for the proper leader of Beggar's Sect is determined by the ownership of the Dog-Beating Staff.

AT 7:28 Uncle Roger claimed that increasing the fire power would only boil the water to 100 degree and could not make the cooking faster. But from the standpoint of heat exchange between the pot and the boiling water, it still needed more heat to boil water faster. Secondly, in the beginning when the food inside the pot is still in room temperature, you still need to provide a lot of heat to cook it. So more heat the faster for the whole pot to be in same temperature with boiling water. After achieving equilibrium, Roger's suggestion is true.

i actually learned about many of these ingredients long ago, thanks to "The Pleasures of Chinese Cooking by Grace Zia Chu" which is a book from 1979. It mentions shark fin, fish maw, abalone, sea cucumber, Jinhua ham (spelled as King Hwa ham in the book which has a counterpart in "Smithfield Ham" apparently and thus Smithfield ham was recommended as a substitute - both seem to be variants of Prosciutto de Parma).

I am actually surprised that Uncle Roger didn't criticize of the lack of MSG....unless they have some umami flavor that doesn't require MSG.

@@kaiju-dr5qn The richness of the ingredients in this dish alone are definitely enough in umami, no additives needed Also, Cantonese people are kinda allergic to MSG hahaha

@@feifizheng9986 Well for my case. I am not allergic. But my mom never add any MSG since it is bad for most of us. So didn't have a pleasure to taste this SALT ON CRACK.

@@kaiju-dr5qn I don't think anyone is truly allergic. For Cantonese people, MSG just gets a bad rap like any other powdered soup. Many of them have the same mentality on Vietnamese Pho and Japanese Ramen.

Actually you can easily heat water to well over 100 degrees using pressure at the top of mount Everest where there is lower pressure water boils at only 68 degrees but at sea level it boils at around 100 degrees so if you increase the pressure even more it could boil at an even hotter temperature.

I dunno if it's enough for ppl to jump over walls, but the deep flavor is really great. Too bad they never allowed 2nd helpings tho' (ps) the judge in this movie, is the same actress who played the landlady "Xiaolongnu" in Kung Fu Hustle !!

I'm currently watching the Triggernometry interview. In all sincerity, I truly believe Nigel's story needs to be seen on the big screen...either as a biopic drama and/or a documentary. It's fascinating. Dave Chappelle should be involved, as a producer. Relatively speaking, Nigel's story is just in it's beginning stages. I believe even greater things are in-store for him.
