Not knowing the result, I can't imagine Bobby won that, but I have to give him mega props for going solo against Esther and Leah in a cooking culture that he is less than familiar with and coming out making food that looks edible. Honestly, he had almost TOO many handicaps on this one, he didn't stand a chance.
Vor 4 Monate@aprylwitkowski7034 +39
Actually Auntie Esther won!
Vor 4 Monate@Lusterredux +11
Yea, back in the day when he first started doing this "challenge chefs at what they excel in" thing, he'd win almost all of the time in a straight fight. He knows what works and what people like, which might not always be authentic--- as authentic usually means regional tastes that might not have wide appeal. I guess his showrunners (or Flay himself) noticed that and started doing handicaps, but at some point it became the norm and now they have no idea how to tone it down without it looking like Flay can't handle it.

Vor 6 Monate@khongnoi1012 +42
@@ciaochau2873 Glass noodles absorb flavor better than pasta, so you should just add flavor after boiling, no point in flavoring the water only to dump most of it away. I’ve been using a lightweight cast iron Dutch oven as my wok, it’s crazy deep and has a curved bottom like a wok. Works well if frying with oils.

As a fellow Korean, I feel the pain that Uncle Roger feels when Jaimie Oliver cooks egg-fried rice.

Hope she won! All her dishes looked great. Fun review!

I've never had the dish so I can't attest to the flavor profiles. There is absolutely nothing wrong with seasoning the water noodles are boiled in though. I finally learned this past year that it's extremely common to do this. Usually it's a very strong flavor you want the noodles to carry into the dish. Garlic and onion powder are common for italian dishes. A lovely co-worker of mine does it for her buttery garlic noodles. She cuts back on the garlic in the butter sauce because of the infusion. It's easier for people that find garlic overwhelming. Maybe that was the goal? Was it sweet soy or aged? Trying to give her the benefit of the doubt.

4:01 at least Bobby is honest about it, as opposed to other chefs who claim their recipes are "traditional" when it's really just an amalgamation of what they think are typical ingredients
Vor 6 Monate@mittenista +2
Right? He's doesn't really know this cuisine and doesn't have time to look it up, so he's making it up as he goes. But when they've got time to look it up and just can't be assed to, there's no excuse.

Oh! That reminds me, i have a steamer I bought myself that I still need to try out. What reminded me? Thinking of how much I hate my rice cooker, and marginally hated the last one, and really hated the one that only worked once at my parent's house and then only good enough to burn the rice, and how I had been cooking rice directly in the oven for years because a nephew broke the rice steamer my parents gave me, which they gave me to replace the one I had bought from Goodwill that lasted quite a while before he broke that one. (sigh) But, I did finally buy a two or three tier steamer and I am suffering rice cooking PTSD at this point and can't bring myself to use it, so I am using the last rice cooker I bought that I HATE.

Feel like this is one of those few times a chef didn't deserve to get roasted even if the ingredients/technique weren't right. Bobby pretty much admitted from the start this is completely out of my wheelhouse, he basically had no idea what he was doing besides a few general recipes/concepts and off he goes. Feel like that's the equivalent of telling Uncle Roger to cook a Passover dinner and he doesn't know anything about Jewish cooking or dietary laws. But I'd seriously want to compete on Uncle Roger's show. I want to sign up!

I always surprised how uncle Roger analyze on Korean food so accurate and now this too, especially on calamari instead of beef on Japchae thing.(Im not saying it is bad but it is lesser common ingredient than beef for Japchae) I would have believed even if he has a Korean wife :D
