As a natural born Mexican I would still eat their food or at least try. The word Taco growing up was basically anything offered to you in a tortilla. Including any dish or combination of eggs, beans, potatoes, ham, chorizo, beef, pork, chicken...etc. This was entertaining, very fun to watch.

As a Mexican i am not offended when home cooks alter our food. I am offended when "chefs" alter Mexican cuisine and call it Mexican food. To often what they cook are Americanized version of our food. When the world sees a chef make a taco with a hard shell , ground beef, lettuce, tomatoes, yellow cheese, and sour cream the world believes that is a Mexican taco.

As a real Mexican, i can confirm you can put anything you want in a tortilla and call it a taco, that's the mexican way ;)

Actually as a Mexican I was taught you make the masa form them into portions and then let them rest for like 30 mins but it’s not for them to rise or anything like that it’s just so the outside dries a little and makes it easier to flatten out

I’ve heard similar things, mostly that it depends on how wet your masa is and if you’re in a dry/humid environment.

I can give most of the tacos a pass, half of them not knowing what Pico de gallllooo is. But the "refried beans" had me swooning and stroking out.

I'm not crazy about collabs, they're usually so awkward. But Uncle Roger and Uncle (Papa) Joshua have great chemistry 😆👌🏻

Masa harina has a sour note from the slaked lime, so using fresh corn(especially if it was sweet corn) would cut the underlying sour note and change the flavor profile of the tortillas. It also would make them tougher because of the cellulose.

That episode of GBBO nearly made me smash my television, and I’m just a fan of Mexican food. I can’t even imagine what an actual citizen of Mexico felt watching that. Hilarious video, Uncle Roger! 😄

Minute mark 4:12, letting corn masa rest gives the masa time to let the water you mixed in hydrate more proficiently. Sounds like bunk, been making tortillas a long time, grew up in texas lived in mexico, pretty much all i eat is tortillas, again sounds crazy definitely makes a big difference giving tortillas 30 ish minutes to rest. My aunts and cousin have a tradition where we watch the GBBO while making Christmas cookies, and it takes place the weekend right after I’m done with finals so I sleep a lot. I woke up right in the middle of this episode so thankfully I missed the disastrous taco section, so I’ve only heard rumors from my relatives on how bad it is until now. I know “pico de Gaulle-o” would’ve taken me out instantly.

I actually have had a feta and potato taco from a Mexican coworker. He was from Guanajuato. It definitely wasn't traditional but it was a good sub on hand for queso fresco or cojita cheese. It was the first time I had a potato taco. Yeah, Mexicans in Oakland, California have even used feta.

Just FYI, Cotija cheese is really hard to find in europe, so usually it is recommended to find a equivalent such as feta cheese and pecorino romano. Some mexicans also use it in europe for home food.

This collab was awesome and fun and we need more.😂😂 But as a Mexican, this episode of GBB hurt my soul and had me cringe watching it without commentary. When this episode came out on Netflix, it took my mom two seconds of it to walk out of room because it hurt her Mexican heritage, soul, and cooking to where she getting pissed that they were overthinking the most simple Mexican foods and yelling at the TV. Now she refuses to watch the episode entirely.😂😂

I'm a Greek. When I saw them put the pheta on those tacos, I felt a stab on my heart 💀🔪

I could forgive the beans not being refried if they were charro or borracho beans but no way in hell would they have known that lol. Also lost it at feta cheese and avocado peeling. And yes, tortilla press and comal are staples in all my relatives homes.

Honestly Hollywood not being able to pronounce such a basic thing as 'pico de gallo' whilst also acting like he has some knowledge of Mexican food AND being a judge on a cooking show was the most egregious thing about this. Of course the contestants messed up a lot, I'm pretty sure I wouldn't know wtf I was doing if someone suddenly asked me to prepare a traditional Polish dish but holy hell the judges on this show!!

Eh, it's not a super common cuisine here. There's no mexican fast food, and mexican restaurants are pretty rare. Mexico's an ocean away. Most brits have only really ever had an Old El Paso fajita kit, that's our exposure to mexican food. It's just not a very common cuisine outside North America I suppose.

About a year ago I started dating a woman from Mexico and her cooking skills are incredible. Watching these people flounder too create simple Mexican dishes was like pulling teeth. When the one girl peeled the avocado like an apple I died. I realize that not all of them have Mexican girlfriends too or w/e so maybe I'm being a bit mean but dios mio, que malo.

I’m from Central California, where we eat Mexican food not just as everyday fare, but for celebrations of all kinds. In fact, if you don’t serve it for get-togethers, people think something is wrong with you (I recommend salsa as a hangover cure, btw). I watched this show with a jaw-drop cringe. The whole show! I couldn’t believe it! Why they didn’t just stick to baking is beyond me. I would never try what they made!

If I may add to the “As a Mexican™️” input: Uncle Roger’s comment about too many spices interfering with the simplicity of Mexican cuisine is _spot on_ - much of Mexican seasoning of chicken or beef is salt, pepper, and _maybe_ lime, onion, beer, and/or a specific chile. None of my tías’ recipes use cumin or paprika or chili powder, and oregano is used as a condiment in specific circumstances.

Nah, I completely disagree. Although mexican cuisine can be simple there are a lot, and I really mean A LOT, of dishes that are complex AF. Just imagine a mole, asado norteño, menudo, pozole, etc. Alv, it's like an infinite list of spices.

My dear Uncle Roger yes we use red onion a lot, specially in southeastern Mexico. Combine with lime juice, finely chopped habanero, salt and pepper and you have an amazing relish used for Cochinita Pibil 🔥🥰🥰❤️
