"Your potato tower must be built on the table, and will be measured from the tableTOP to the highest standing potato" I'm surprised that no one flipped the table upside down and built their tower on the bottom of the table.
Please do a "best of the worst" series with Roisin, Joe, Paul, James, etc. Plsplspls
For the live challenge is the best solution not to just flip the table upside down so the table top is on the floor then place a single potato on the "bottom" of the table, which, is its highest point since its upside down? Then your tower should technically be about 3 feet tall. Ez win.

For the final task, I would turn the table upside down and build my tower on the base, because it’s measured from the tabletop up, so I get the whole table height extra

For the pineapple bit, I think I would have pulled off 3-4 leaves and hidden them in random places, then just put the rest of the pineapple in a blatant place, like under my shirt. The big part is discovered quickly and then the rest of the pineapple is nearly impossible to guess the locations.
