Another method to use if you don't have a spoon and don't want to swirl is to knock back the espresso like a shot of tequila and swish it around like mouthwash before you taste it. 😂

Dear James, first of all I wanna say you thank you for doing these videos. After having read your book I stumbled across you here on YouTube a few months ago and have since watched very, very many of your videos. Learned quite a bit, enjoyed all of them and feel like lots of it has helped me with my quest to make great espresso at home. But this one is beyond me . . . have never stirred my espresso and now tried it (blind, twice) and cannot taste a difference. I start to wonder what's wrong with me or my taste.

This applies to brewed coffee as well! Swirling a Chemex doesn’t work - recommend stirring with a paddle, or better yet, pour the entire brew into another preheated carafe to really mix everything up before serving.

I only recently learned you were supposed to mix your espresso. I always thought the spoon they gave you was more for the old style french hotel espresso practice, which usually came out extremely bitter and you'd get assortments of small sugar packets, a little bit of chocolate, a hazelnut, cream, water, etc and you'd dillute and mix however you pleased. My normal coffee shop by my office experimented with making espresso without the bottoms, there was no incidental mixing at all, then found the top was bitter and anemic and the bottom was super rich and sweet. Makes a huge difference

Before I found your channel I clicked go on my Sette 30 which generally stayed at one grind setting, lazily tamped whatever 5 seconds was in terms of mass into the stock basket and portafilter that came with my Breville, and clicked the 2 shot button. Now I've just gone and bought a 6 pack of demitasse spoons to stir the espresso that I meticulously dose by weight and dial in daily from a Niche Zero, paddle and tamp with SAI tools, and pull from a Linea Mini. Needless to say my pocketbook is not your biggest fan. But I definitely am. Thank you so much for creating easily the most compelling coffee channel on YouTube. You're probably singlehandedly responsible for my newfound love affair with coffee.

I do a lot of work involving fluid dynamics, some of it involving mixing vessels (big industrial stuff). There's a reason they use mixing blades when something needs to be thoroughly mixed. Swirling _can_ be made to work, but it takes so much longer to actually achieve anything that it's pretty pointless.

Totally agree on the mixing, must do. But I’m a swirler too, I like to leave my cup clean and the swirling action, not only performed at the beginning, but at every sip, allows me to get all the crema stuck on the cup. The vast majority of Italians do it, and we have acquired the skill of doing it without spilling any drop, well most of the times 😉

Ok just one idea: When you rise and turn your cup for drinking, I have some doubts that what comes forward to your lips is the upper part of your drink. If that was the case you would always end up drinking the foamy part completely first, and that doesn't happen.

That's it, I'm making espresso in a Glen cairn. If someone gives me grief for swirling the glass, I can tell them it's to get get more of the nose from the coffee. That, and I only have one espresso cup, but multiple Glen cairns (I host whisky tastings at home).

I think you are missing out on fluid dynamics here. Depending on viscosity and many other factors, as you tilt the cup, some of the liquid on bottom comes to the lip of the cup and a little of the top layer is slurped off of the top, this you likely get a bit of all of the layers. To test you would need to use a straw to taste each layer. Stirring may also lead to more oxidation than swirling which may affect your taste experience.

I came from palermo sicily and i grown up in a very popular coffee bar. We got a lot of habits about espresso, one of them is after swirling the coffee we smear the top lip of the cup so the lips get coffee test before you sip it. Ciao and i like your channel very much 👍
