Clean hands is pointless. Bacteria like salmonella are found on the egg shell. You touch the shell and contaminate your egg and you never heat the egg enough to kill the bacteria. This is gross and unsafe. Also you shouldn't touch the meat when you are cutting it then touch the dials on your stove...there is so much cross contamination here.

I fell in love with Carbonara when I was in Rome. This is one of the few legit carbonara recipes I've seen on YouTube. I make mine with all the same ingredients, but I put it all together a little differently. And guancale is way too hard to find so I always use pancetta

Don't let these Italians fool you, I live in Italy and I can tell you that 75% of the times I order carbonara, it sucks. You would not believe how many times they screw it up and scramble the eggs! I actually gave up on ordering it here, for the fear of seeing a yellow scrambled mess. Sure, they know how it should be done, but do they pay attention....rarely it seems. At least in restaurants. When I want carbonara, I go to my neighborhood macelleria and get guanciale and make it myself. Fun fact: the best carbonara I've ever had was in a hotel in Hanoi, Vietnam-go figure.
