Sometimes in business really creative people in this case chefs need someone to balance their creative impulses with financial reality which doesn't always come naturally to creative types. As they said Simon probably drives them mad sometimes, but I'd imagine he's a huge part of their success as a business.

I really don't agree with a chef picking a caviar based solely on the color and it's difficulty to find, it's bizarre and shows that he lacks any understanding of what qualities a good and bad caviar has. Without even caring about the taste, texture, sourcing of the individual caviars the distributor was showing, he just dismissed all of them because they didn't match the walls of his restaurant. That's absurd and insanely stupid. The rest of the video was a pleasure to watch. I went back and watched the caviar part several times over and just couldn't wrap my mind around it.

You can tell that the passion between the 2 chefs and the owner is genuine. Most places would get some A5 and put it on the menu regardless just for the price and the wow factor but to sit and ask yourself, ok it is double the price... is it worth double when you actually have it compared to what is already on offer shows restraint and knowledge of who the customer base is. Also thinking of the little things like the seafood tower, the caviar on top, just being out of reach or just above eye level when placed on the table and thinking about the fact that bringing it down off of it and simply putting it on the table not being "that fun", or the potential of the clam being difficult to get to and the potential of an embarrassing moment happening is just so much thought put into very easily overlooked things where most ego driven chefs and owners have an attitude that says "do it my way or you are a filthy peasant". As someone who isn't some high class guy, just from this video I would feel totally comfortable just going there for a really nice dinner a few times a year to really treat myself and close friends/family and not feel like I would be talked down to in my non designer clothes.

I have a neighbor who is an older first generation Korean immigrant. She makes a radish Kim chi in addition to the normal cabbage one and it really is dramatically better than anything I’ve ever gotten from an Asian market or Korean bbq. I do think there a great deal of poor imitations out there.

I occasionally ate there pre-pandemic. Didn't go more often only because it's pretty much always fully booked. And yeah, their dry-aging room is SWAG the moment you see it in person. I can't believe this video didn't include more footage of that dry-aging room (which is visible for customers and looks very impressive). Fun fact: once they opened, several of the best and most experienced employees I know from other top Asian steakhouse/barbeque places in NYC went and joined them. Something to tell you how good they are.
