@Niklas Wassermann to be fair having a temperature scale based (somewhat) on the normal human temperature makes quite a bit more sense for determining how hot or cold it is outside than a scale based on the various points of water as temperature outside and how you feel is relative to your internal body temperature. That's about the only support I can give to imperial measurements because the rest make almost no sense

Back in the 90s, the pumpkin carving kits you could get for Halloween with the tiny orange pokers and scoops had a pumpkin pie recipe on the back, with instructions for how to roast a pumpkin. My mom followed the recipe on a whim one Halloween and we've never gone back - real pumpkin is just SO much better than the canned stuff! She always brings the pie for Thanksgiving and I've started making it when I moved out too. People think it's a secret family recipe, we just don't mention where it came from originally!

@Pamela Morris I think where you live makes a large difference. It sounds like you're buying your pumpkins from actual farms, I have a much higher degree of trust buying them from road side stands and farms (I live in Ohio, those are plentiful) but I think the vast majority of people are just buying their pumpkins from like.. Walmart. And whatever other chain grocery stores. Not as many people even wash their edible produce as they should, it's better to assume someone knows nothing about crops than assume they know how to properly identify and handle things that are questionably edible. Kind of like foraging

@Giraffe FlavoredCondoms that's not completely true. Most people have common sense and wash their pumpkins before cutting or carving. The majority of pumpkin farms are organically grown with additional fruit trees and don't spray pesticides as they are banned - the one's that make you sick. We have ate the same pumpkins from the local patch my entire 53 year's on this Earth & never been sick from any pumkins, apples, ciders, zucchini, all the items they sell & make fresh in the store they run. They also sell to the local grocery stores & their apple cider & cider cookies are one of the only ciders sold commercially. Pumpkin is also used as a vegetable as well just like a sweet potato or squash would be and added to soups, etc. As long as you're cleaning your pumpkins and breaking them down by baking them til fork tender you should have no problem making a simple pumpkin pie recipe.

@Yata thats a good point because i dont believe that his family hated him but the was biased into liking him because of his cooking but he put so much fricking effort into this that its hard to think of a logical reason to put that much effort into a lie so considering that, the story might be semi true but added exagerations in to makr it more dramatic/poetic but alot of the logical stand points dont make sense if you use a bit of intuition so i dont know i think that the story might be close to what actually happened but still cant be sure

Depends on the pumpkin type you use, but generally I think true pumpkin pie is less sweet. Not sure if that is because of the type of squash (pumpkin is a swish) or whatever they add to canned stuff

You can buy both in Sainsbury's, at least in London. Though I will caveat that by saying I don't know the exact pumpkin types they do but there are a few that aren't carving ones. I've seen eating pumpkins in actual green grocers, waitrose also, as well those little posh shops that usually have like a deli.

Interesting additions to this recipe, as the time of year is nearing again: Add ~1 cup medium-chopped or crushed pecans to the filling. Add a banana to the filling (for real, you won't notice it in there, but once you did it, you'll notice it missing). Drizzle some caramel over it. Serve with ice cream. For Dutch people: add "speculaaskruiden" instead of manually mixing the spices.

@Autumn Olguin pumpkin's are plentiful right now both in the store and in the fields. You can use any type of pumpkin you can find to make pie. If it's a larger pumpkin you just need to adjust and add more sugar and spices.

Fantastic recipe! Made this today now that fall is in full swing. This is how pumpkin pie is meant to be and categorically better than the canned pumpkin puree and condensed milk. No sugary after taste! Crisp, buttery, and flaky crust. (Thank you for the recommendation to bake first before pouring the custard filling). I will note don't forget to add vanilla (preferably high quality if possible!) It's in the recipe notes, but not in the video. Highly recommend making whipped cream w/heavy cream, sugar, and vanilla. Fresh nutmeg in the whipped cream and on top of the pie takes it to another level. I will say this all and all took about 3 hours to make as first attempt, but 100% well worth it. Thank you Joshua!!

You are right! I just used measurements from the website and its off. It's half the amount of flour. But if you follow what he says in the video, then it's correct. Because of that I accidentally made twice the amount of crust I wanted, but hey, now I have another pie crust in the freezer ready to bake 😂

It may depend on the flour. Some of them are lighter, some are heavier. I recommend measuring it in cups and then putting it on a scale to see how much is your flour

To my vegan/lactose intolerant friends : I made the condensed milk with unsweetened soy milk, soy cream and sugar and it worked like a charm! You just have to not let it boil (or it will turn into tofu) and simmer for a tad longer! Hope this helps someone :)

I always make my pumpkin pie from scratch, but the consistency is never right. The pumpkin purée always ends up being too watery and stringy. Next time I’ll try straining it. Is the cheesecloth necessary? Also, how do you avoid the stringy consistency? Mine always has those annoying little strings from the inside of the pumpkin, plus the occasional seed that I missed. I also usually use a potato masher, so I’ll try using my blender next time.

Just remember, there are raw ingredients and refined ingredients. Raw ingredients have to be purchased, but refined ingredients can be made with kitchen equipment in your house and raw ingredients. Granulated sugar is an example of a raw ingredient while powdered sugar is a refined ingredient you can make with granulated sugar, corn starch, and a food processor. It's also cheaper to make your own powdered sugar ,net cost wise, than it is to purchase it.

I love this! My kids asked for a pumpkin pie and they wanted to make it with pumpkins, so at only ages five and three, we are going for it! One question though, when I click on the recipe link in the description box, the condensed milk also has butter listed as an ingredient. I compare this to different websites and found a few that also use butter and a few that omitted. What is your preference for this recipe??

Before mixing the pumpkin puree with the other ingredients, put it in a skillet and gently heat it for 15-20 minutes, stirring occasionally. This will help release the natural pumpkin flavor, so that the finished product will taste more strongly of pumpkin. Works with both homemade and canned pumpkin puree.

This is my go to crust! I have made it so many times and every time all my family and friends are so amazing at how good it taste! If you have extra crust I always make strawberry tarts! So delicious! Just take a circle shape (a mason jar works great)and cut out circle shapes. Then butter muffin tins and place the mini crusts in the muffin tins add a small dollop of strawberry jam and a sprinkle of coarse sugar. Bake for about 8 minutes and you will fall in love with these tasty tarts! Cool for a couple of minutes before taking a bite!

I made this today and it was AMAZING. I used a pretty big sugar pumpkin and it made two pies. I used store bought condensed milk and it was still amazing! If you don't have cheesecloth to strain the pumpkins you can just use paper towels and a strainer and let it sit. Overall, I think it's worth it to go the extra step and use fresh pumpkin if you can find sugar pumpkins!

alright josh i tried this recipe last year and made 6 pies. then when I wanted to make more the pum[kins were gone 😭. so now as soon as my grocery store brought in the sugar pie pumpkins i went nuts. i made 10 pies already so far only ate 1 and gave out 8. seriously the secret here is the condensed milk. this year i made my own along with my own whipped cream and holy shit did it elevate it even higher. i will be making this til i die, seriously the best pumpkin pie i have tasted

@Mary Burrola yes i did shield it since 1 hour in the oven is too much for a pie crust, (tested it and it burned) i made a shield from foil and loosely made it fit and it was perfect

I took just the spice mix, substituted vanilla sugar fot the vanilla extract, mixed well and now add about 1/2 teaspoon to my coffee in the morning. Its amazing:)

I've been making real pumpkin pie for years, the pumpking makes a huge difference. If you wanna try something different, try a gramcracker crust. Almost everyone i know prefers the fresh pumpkin (not always the gramcracker crust tbh) only my father in law and his gf don't like any of it... but if it's not premade or take out its not 'real food' to them.

Currently have it in the oven right now. I finally found a sugar pumpkin and I was totally gonna use the canned sweetened condensed milk because I thought I had a can of it but I didn’t have any so I made my own using your instructions and it wasn’t nearly as difficult as I thought it was gonna be and holy crap it’s so much better than the can. So far the hardest part was cutting that damn pumpkin in half. I’m not good with knives and my husband was taking a nap at the time but I managed on my own without losing any digits.
