As a North Carolinian who smokes a lot of pork I've always positioned my meat under the top vent so the smoke travels across it as it leaves the grill. Is there a reason to not do that here? Or is George really just using the built-in thermometer? Because in that case, I'll go with my grate probe. Also: How many oz patties would you recommend??

Shouldn't you use something like an iGrill and a probe by the meat to measure temp and have the vent above the meat so it guides the smoke up and through the meat?

2:13 "don't soak your wood chips. . . it will create steam not smoke" well yeah it will steam but it slows down the burn so it's released slowly throughout the processing and doesn't burn all at once and go out the grill. I've always done that and it does smoke, it's wood on hot coals duh

Once while out in the desert searching for a lost burger recipe, George had to fight off several packs of prairie dogs while cooking his burgers at night. After those fearful evenings he developed an almost supernatural "burger sense" that tells him whenever there are hungry canines around which you can see at 4:54, he reacts almost instantly as if he sensed the dog inhaling before letting out its bark. George just some general knowledge on wood for smoking. Central Texans in the past generally used oak for briskets, burgers, ribs, et cetera. Pecan was also popular especially for smoking sausage. Mesquite was generally a San Antonio and West Texas thing and when you were dirt poor or just did not have a reliable source of wood huisache was also used since it has similar properties to mesquite. You're 100% right, you do not want to use a heavy wood like mesquite when making burgers. I'll go as far to say it's about as good as cedar for smoking. Mesquite, cedar, et cetera make great coals because they get hot and stay hot but if you smoke for too long with them it makes your meat bitter.

Secret pro BBQ tip. Let some vegetable oil soak into your wood to serve as starter fuel. Saturate a paper towel with the oil and crumple it into a ball, put it in center of wood...light with fire.

If you use an offset smoker, the time will be closer to 90 minutes. Still makes a great burger. AND if you have enough space, you can do it with your piece de resitance, like a pork shoulder.

NOOOOOOOOOOO...........! No sauce NO! Hands off. I been smoking burgers since the 70's, and I promise; Sauce kills the wonderful smoke and melted beef fat flavors that make this the best of all ways to make burgers. Just salt, pepper, smoke to 195-205, onion, maybe cheese, maybe a lil mayo. Thats it. OH...use mesquite. Honest. It has a sweeter flavor than oak or hickory and none of the bitterness. I love, ya, George, and I learned a lot about burger styles from you, just trust me on this one.
