How a Former Rocket Scientist Makes the Best Copper Pots in America - Handmade

  • Am Vor year

    EaterEater

Rocket scientist-turned-coppersmith Jim Hamann’s devotion to cookware came from a beautiful vintage pot he found on a trip to France. After starting a business restoring copper pots and pans for others, he decided to begin handcrafting his own, honoring the methods and quality of the centuries-old tradition at his company Duparquet Copper Cookware. people complaining about the price, while I agree pricepoints on things like this can get stupid, it's still a tool for a profession that range from casual homecook to international acclaimed kitchens. Look at high quality hand tools, you can grab a cheapo from online for less than a Mcdonald's meal vs something that's forged, proper heat treated, and have tight tolerances that'll very easily cost 20x. It comes down to how serious you are with your craft, how much you depend on your tools, and obviously how deep your pockets are.

There’s no way he’s a qualified mechanic engineer, he’s damaging the pan bending it that way and creating weak points within the copper itself, that’s why there’s lines in it, he’s better off annealing it.

Why you do not coating the whole pan with tin? Yes, it don´t look longer like copper, but you have not to polish the cookware several times at year. Greetings from Germany.

I got in an auto accident July 2019. Breaks failed... Lost control and hit the biggest tree I was trying to avoid. Car started on fire. Climbed out and dragged my self 30 feet. My car blew up and everything. There was nothing left of my car but I was happy I remembered my chunk of coper in the trunk from my grandparents... It's nasty brown and green... Cannot get it looking good.

You say the keyhole in your handles is to hang up the pans. Obviously you have never been on the line where real Chefs are working at two or three plates on a mixed order all at once. Each pan requires it's own utensil to keep from mixing flavors. Chefs will use a clean long spoon or utensil and stick the spoon handle in the keyhole and point it over the pan to drip like a fishing pole. They don't ever lay the spoon down until the recipe is finished. Three or more may be required. After the plate everything is sent to the "Scullery Maid" for cleaning and reloading the pan rack with clean spoons and utensils. (I was a cooks helper back in Collage days) Chefs are Super picky and like their tools in the same place every minute.

Can you make a copper griddle about 1-1/2' long to put on a hotplate for pancake? Can you make a 60 gallon cooker? With a pyramid cover with an arm feeding off of it for steaming wood and doubling as a crawfish boiler, should the need arise distill water? Which there's aluminum pots, but I do not want aluminum in my crawfish.

These pans are really beautiful, but there's a reason they fell out of favour - they're obsolete. Tinned copper can only be heated so far before the tin melts into whatever you're cooking. This is why bonded pans were invented with a layer of copper or aluminium between two layers of unreactive, non-melting stainless steel. It never ceases to amaze me that so many people assume these are the pinnacle of cookware.

I would never pay for this. Tin is okey-ish for a tin can on the shelf but probably not ok for cooking in it. The melting point of tin is not too high: 230 C. Moreover, tin is a soft material so it will wear out really soon. Who wants tin in his food?
