Its easier than it looks because one you learn one channel they're all the same. Most of the controls are to do with routing and balancing the signal, so how loud the signal is coming in, where its going (which track) how much of that track you can hear in the room and how much the musician can hear. You can also route a bit to a reverb unit to make it more echo-y then control the pan, how much signal in left speaker, hjow much in right, and finally EQ (treble bass) and dynamics (compression). The latter two are more for mixing than tracking (what we're doing here) though.

Haha...yes, I've heard that the players at some orchestra (philharmonic something, haha) in London can often sight read new complicated music and play almost immediately...The Alpensinfonie was premiered the same day it was presented to the orchestra or something, though I'm not sure it was with whatever that orchestra is, haha...at any rate...no expert, not sure what orchestra was being referred to, and I would guess it's not this one, but they supposedly have a better ability to sight-read in some places in England or something...

One of the reasons for this is the west end theatre scene. There are in excess of 80 pits with pit bands. Union rules are that once you're given a seat in one of these pits you have it for the entire production's run. So you can imagine with something like Phantom Of The Opera a seat is a valuable thing. Naturally you couldn't commit to playing that musical 8 times a week for over 30 years so you tend to "dep out" your seat. The depping culture means that musicians become incredibly adept at sitting down in front of a chart, curtain up and off you go on a wing and a prayer. Hence why London musicians are the best sight readers in the world. Biggest number of theatres, biggest number of pits, every musician is a dep, to be a dep you need to read... FAST.

I don't think it is made very clear, but we are not listening to what was recorded, but the finished, mastered, product with sampled woodwind, percussion and brass, and voices, added at the mix stage.

@Christian Henson Music Thanks. I think we are actually more or less in agreement. I should have added the word "only" . Of course we are hearing what was being recorded but we are also hearing all the add-ons. What I didn't know was that the add-ons were pre-recorded, so both were available at the time of what we see.

No you're listening to what is being recorded, they're playing to a click which synchronises to a backing track I made containing extra strings, brass, woods, and voices. Fiona (engineer) has added reverb across the mix and backing tracks to blend it. When you see me fiddling with the faders I'm adjusting the backing track to check that things are blending well. What your hearing is a direct feed from the desk, so everything we're hearing in the control room is what you're hearing too. Hope this clears that up.

There are little mutes that go on/near the bridge of the stringed instruments, giving them a softer and slightly subdued sound. Similar effect to the 'una corda' pedal of a piano.
