OMG! This was the BEST chicken adobo I ever had. Even though I didn’t have palm sugar or Silver Swan Soy Sauce, it was amazing. My husband and son ate EVERY SINGLE PIECE of chicken. I mean, my son had his mouth over the edge of the bowl to shovel it into his mouth faster. (I hoped to have leftovers to make the potstickers, but there was nothing left!) I went and got Silver Swan AND Datu Puti cane vinegar to make it again! I can’t imagine it being even better.

@Please don't yeah.... sometimes things are so rich when put together and you could feel full with just a few bites.... it's all about the combination really... i also don't know anyone who eats plain rice only, it's always with something else. oh and another thing...... as an asian who grew up and living in asia, i also consider fried rice or congees and porridges plain rice, you really have to pair it with a dish otherwise i would just be looking at you funny, like you are sick or have something bothering your tummy. especially with congee, i eat it plain if i am really sick.

@Please don't Absolutely yes. I am German and we are generally not big on flavour. Most of our cuisine is flavoured with salt, pepper and for the crazy people out there the is nutmeg or paprika spices. I once ate at an Indian restaurant in Scotland and while it was very tasty, it made me cry. Of course I can’t speak for everyone.

@shiv katall As an Ilokano, I think it needs more. I Probably think that because we always use fresh native chicken with it, and it's extra lean (malansa, maango or nalangsi. is what we call it) but there's some sort of flavor to that and we don't let that go to waste so we just overcompensate it with at least 30-50 garlic cloves, (it's a lot. I know, but it's justifiable. Our Native chickens are overfed and are massive. a single one would be at 4-6 kilos.) and that entire 6 kilos of Chicken Adobo lasts for 1 sitting coz grandma took custody of the kitchen and the entire family is here and no one could seem to stop chowing down.

By far, yours is the most faithful Adobo recipe (at least to the basic recipe most Filipinos grew up with). Although strictly the traditional recipe has no sugar, I personally do the sweet version occasionally. I don't really sear the meat because the chicken skin already has a lot of fat but searing does add flavor. Great job!

leftover adobo are also great for making adobo flakes, just cut the leftover meat to shreds, put it in the pan (add some of the left over as well), and fry it until the sauce dries up, u can also season it a bit more if you'd like. This is what me and my family usually do the next morning when we have leftovers

I cook adobo the same way that Josh does, and I even admire the recommendation for Silver Swan soy sauce (although my family and I use Datu Puti instead). Only differences are that I don't marinate the chicken, and I use cane vinegar (then again, most Filipinos would use that) and oyster sauce instead of rice wine vinegar and palm sugar.

@Kuchenrolle they have slightly different ingredients in the usa brewed than the Japanese brewed kikkomans. I quit buying the usa brewed a few years back once i tried the Japanese brewed from amazon. Japanese is more full bodied and flavorful than the usa brewed. A noticeable difference in taste. They taste very similar but its like the usa is diluted or watered down.

Fun fact: Adobo is a way of cooking and preserving by filipinos, not the recipe itself. Filipinos pre-colonial times have been cooking chicken, or any form of protein in vinegar seasoned with salt. The soy sauce was a touch that came from the chinese/japanese. When the Spaniards arrived and saw the way filipinos cook the chicken, they named it adobar - which means cooking in its own liquid/marinade. Then later it became Adobo. 👌

This is one of the correct ways on preparing adobo. But as a Capampangan, (a filipino from Pampanga province) We prefer our adobo to be sautéed in onions and garlic first after the marination process.😉

"Silver swan" the only soy sauce i would cook for adobo and "Datu puti" would be for the vinegar i really love eating adobo with "ginamos with suha and sili", rice and coffee as an afternoon snack. Ginamos is found somewhere in the southern part of the Philippines (Northern Mindanao to be exact)

Didn't have rice vinegar or palm sugar so I used demarara sugar and shaoxing wine instead......it's amazing! I will be making this with the correct ingredients in the future but I wanted to say how amazing these changes were....That is all!

The taste of every adobo will be different depending on the type of vinegar and soy sauce you are going to use.. A touch of sugar will make it sweet, salty and sour. And at time a little spicy as well. So much diversity of its recipe..

Its technically impossible to make the perfect chicken/pork adobo since there are so many different recipes just from the philippines alone (not to mention the spin-off recipes neighboring countries have developed), but knock yourself out :D every adobo recipe ive tried or cooked (that isnt badly seasoned) is nothing short of amazing, so i'm looking forward to this one! (also part filipina/japanese {moms side} and part british/irish {dads side} so my cooking repertoire is quite expansive if i do say so myself)

I've lived with adobo all my life and I agree it's one of the best chicken dishes. Great with pork too. But damn. This is looking like the wagyu of adobo. Or at least mid-high restaurant vs home cooking.

Quick tip for the rice: after transferring your cooked adobo to your serving plate, throw some white rice in the pot/pan and stirfry it a bit with some of the leftover sauce to have your own adobo rice 🤤 also if you're a sucker for spice like i do, throw a couple slices of chili or sprinkle some chili flakes when you simmer your adobo while cooking. The spiciness will add another dimension to everything you just said about adobo's flavor profile 🔥🔥🔥

Depending on the region or person cooking, it can be different. In my family it's still thick, but it doesn't taste sweet. It's a bit more acidic, but not too acidic, just a bit of tang.

Hi Joshua. Here in the PH we actually use cane vinegar (silver swan also sells those) but the rice vinegar is interesting. Overall, your recipe and ingredients are correct although sugar is optional. Low and slow is how it'ss done. :) another version you can try is Pork belly adobo... same recipe, just swap chicken with the pork... or even do a combo of pork and chicken. :) Another way to use the leftovers (especially if you use the pork version) is to shred the pork into small pieces (called adobo flakes) and fry up till crispy)... you can go a step further and add those flakes and sauce to make adobo (fried) rice. :)
