I bought a hunk of Parmiggiano Reggiano aged 24 months and vowed to keep trying this recipe until the cheese was gone. It took six attempts, and I give up! Clumps! I tried it in the pan, in a plate (like the Roman restaurant), in both a pan and a bowl, nothing works. It would be nice if BA monitored these comments and offered help. Maybe that's why people use cream - it's foolprooof, cheese sauce comes together in seconds.

I think people forget Alfredo is Italian American so saying it doesn’t have cream is wrong. There is no such thing as Alfredo in Italy. fettuccine al burro is what she’s cooking. It’s like pepperoni pizza, in Italy there is no such thing, you would have to order pizza salami picante.

2:30 you can definitely add all the butter at once and stir once it's melted. Later adding the cheese gradually makes sense.

You know, I've never liked fettucine alfredo because of how thick and gloopy the sauce can be - possibly because of the addition of the heavy cream. I may have to try it this way and see how it comes out.

Amit M it really is an incredible dish when prepared right. It isn’t heavy like something you’d get at Olive Garden. Perfect as it is but add some broccoli and pan fried chicken pieces and you have a solid meal

It's not pasta water until the pasta has cooked in the water. The pasta has to release some of its starch for the water to be right for this recipe. You can't just dip into the water as soon as you put the pasta in. This is sloppy and unacceptable. You can't make the sauce until the pasta has finished cooking, at which point the starchy water will be perfect to make the sauce. I am very disappointed in you, Carla.

In Italy they just put some pats of butter in the dish, then take the pasta right out of the water and add pecorino Romano cheese and start mixing and folding until it makes a creamy sauce.

Wow my family and I loved this recipe! So simple yet it packs such complex flavor and texture. I always made Alfredo with cream/milk but I don't think I'll ever go back after this. I added sliced zucchinis just to switch it up a bit. Sooo good! Thank you Carla!!

I add two smashed cloves of garlic to flavor the butter/water then take them out so no one bites into a garlic clove. Gives it a nice garlic taste not overpowering the sauce.

That’s a butter and Parmesan sauce. Alfredo Sauce has cream, and I like it that way..lol I’d also eat the butter and parm sauce, but I really wouldn’t call it Alfredo. No matter who or where it was invented, we all call the cream version Alfredo. 😝
