Jade Bell A trick another pickler shared with me, but I have not tried yet, is to heavily, pre-salt the veg, let it sit for a while to draw out all the excess water, then rinse well, pat dry, and pickle; this method seems to keep pickled onions crunchy, I can not imagine why it would not work for pickles. Another method I have heard is including bay leaf or grape leaf; apparently, there is something in it that will keep the veg crunchy.

You are wrong! The History of Bread & Butter Pickles. Around the turn of the century (1900) there was a cucumber farmer in Illinois who was trying to figure out what to do with the cucumbers that no one would buy because they were misshapened. His wife said why don't we make pickles out of them and pulled out her Mother's pickle recipe. They made a batch and took it to the local grocery store and traded the pickles for ... you guessed it ... Bread & Butter ... Hence the name. B&B pickles became the first American food rage. By the end of the 1920s if you did not have B&B pickles on your dinner table you did not have a well-set table. On a fun note, B&B pickles are one of the few true American pickles. Unlike most of our pickles, they never existed in Europe. I don't think there is a "wrong" recipe for B&B pickles. When I started making mine I asked my Mom for the recipe she always used when I was a kid. She sent me that recipe plus all of my Aunt's various recipes. I ended up having to put together a spreadsheet of ingredients and make my B&B pickles out of the most common ingredients PLUS, like Dave's Famous Pickles, I add red serrano peppers from my garden. (I think Dave uses red jalapenos.)

I used the brine to make a three bean salad with onions sliced carrots, sweet peppers and cauliflower florets. If you have Leather Shoes, cook them in soup. Those are made of skins. Edit: Populus Roma and Populus Imperium Romanus does this all the time. Mostly by the Legionarius and Auxilia in campaign as last resort or punishment. Ps, they don't have plastic in those time. Most footwear are made of linen or skins.

I know it's been 6 years since you uploaded this video, but I want to know if you can do this with other stuff, like carrots, cauliflower, and green, red, yellow, and orange peppers? I'm not a "cook", really, and I don't grow stuff or do "canning". But we go through a lot of pickles and there are a couple of my grandkids who rebel at eating vegetables. If these kinds of veggies can be turned into something pickled, I think they may start eating them...

This is actually an old English way of doing pickles after salting we did the same with white onions left for a few hours put in jars at brown vinegar add a few mustard seeds or sliced chillies and leave twenty four hours no cooking needed try it's wonderful
