Important to mention that young ginger isn't the age of the ginger. It's just an entirely different type of ginger. The Thais call it galangal. It's REALLY different. It has its own scent and flavor. And it's crucial to how fragrant a good Tom Yum will end up.

If you leave the skin on the ginger, it will help to boost the yeasts that create the fermentation. :) That's why irradiated ginger doesn't do so well, since the skin is the part that has been "sanitized." I've had pretty good luck with organic, though! And I was so happy to see someone else reuses kombucha bottles--they're the best! All of my friends know to save them for me....the crazy bottle lady. :P

Should have used filtered water not tap water. Chlorine content in tap water reduces fermentation activity. That is likely your problem. That or use 1/2 more mature ginger.

My guess is that for some reason the young ginger wasn’t fermenting as much as the old ginger would’ve. The carbon dioxide and ethanol (alcohol) needs to be made through a process of chemical reactions in the cells of the ginger and also requires glucose. Since the glucose is supplied through the sugar, there is probably something about the fresh ginger that is inhibiting the chemical processes or is stopping the anaerobic fermentation altogether after a certain point.

Personally whenever I make something with sugar and juicy fruits or anything where you want to extract flavors and juice, I let them sit in the sugar for a while so that they can extract the juices and flavour while they dissolve the sugars. If you're making jams, this works really well, and for apple jam, let the skins sit in as well so that extracts colour (red apples) and pectin
