I live in Turkey and my grandmas are literally professional at making sourdough bread.I was eating that bread while watching too.Y-yeah, don't ask.

The bigger the starter, the more volume has proportional to its surface area. Since you pop all the bubbles on the surface when putting it in the water, that means that a smaller sample of the starter is LESS likely to float. That explains the float taste failure in the beginning.

The bacteria comes from the original wheat, certain types of bacteria prefer certain types of wheat fields, and have been on this earth for centuries. You can maintain a starter in a closed environment and it will live, if fed.(science) This age old bacterium growing your starter is way more amazing than the myth that bacteria comes from the air in your house ( although types of bacteria can infiltrate your starter the original bacteria is usually strong enough to overtake the environmental type)

I’ve been watching a lot of Claire videos and I just have to say that Brad & Claire have really nice chemistry. Not necessarily romantic chemistry — though I could certainly see them dating — but definitely great friendship chemistry. I’m sure it just has to do with the fact that they are wonderful, nice, funny people and that they are friends (even just coworker friends).
