When I watched this 3 years ago, Alton’s statement about how the food people buy brings him down resonated with me. To this day whenever I pick up something up at a grocery store or look down at my cart I wonder “What would Alton do?” By and large, this has greatly improved my diet’s quality.

@Mercy Fabian Nah, the nasty taste of it is part of the shock & awe. The reason why it's hotter than everything else is that they use pepper extracts. It's made largely from habanero, but they're using a concentrate, so as one guest remarked it's hotter than habanero itself. Of course using this concentrate is also why it tastes like trash.

I agree with y'all, it kinda wouldn't be Hot Ones without Da Bomb now, but it's too bad. Because that stupid sauce ruins the ability of guests to really appreciate the last two sauces which actually TASTE GOOD,, but you can't tell it now because you're still recovering from Da Bomb. I don't know what the solution is.

@E. Johnson awesome, I appreciate the tip, and will definitely be trying them. There's a place in AZ called Big Reds Hot Sauce that does a bit of the same. They emphasize flavor while bringing the heat, and I think they're going to do well in the coming years. No idea how they match up to Señor LaChuga, but I do know they're good.

Bourdain's thing wasn't about the science of food. His best episodes in "no reservations" and his best dishes weren't about the science of food, but the experience of eating. He cared more about a grandma with good taste making a shrimp dish in south Asia than he did about the science of how shrimp should be used

I love how Alton strikes on one of the tenets of hot saucing: You can either have a good hot sauce or a hot hot sauce. Anyone who makes a spicy hot sauce doesn't seem to care about the flavor, and anyone who makes a flavorful hot sauce doesn't really care about spice as much.

We once found something spicy that she could eat, and she really liked it and enjoyed what it brought to whatever we were eating, but sadly neither of us can remember where or what it was.

That man taught me at least 50% of what I know about food. I'm not talking about how to cook, but about food. Good Eats was amazing, because you don't walk away with a recipe. You walk away with insight. Any other show would teach you how to make hot chocolate, Altons show taught you how to make chocolate. Who invented chocolate. When it's best used. What to look for in quality. Why it's ideal for a hot dairy based beverage. It was like understanding ingredients, was *way* more important, than the recipes you use them in. +Edit. IDK how many of you know this, but IIRC Alton wasn't originally a huge foodie, but rather a theater/film-making nerd. So I guess cooking as a hobby, but *passion* for creating good television, was a perfect combination for inspiring a generation. You never know where life will take you, eh?

There's something... Transcendent about Alton Brown. He's one of those super intellectual people who thinks about things on a different level than the average person, but he hasn't lost his humanity for it. @RandoNoLogic Alton totally has Gordon beat when it comes to analyzing/reviewing the sauces. Definitely agree with that. Ramsay didn't even attempt to review any of these... though to be fair, reviewing the sauces isn't really the point of the show either. Although in Brown's defense, someone who works with food would definitely want to talk about it like he does. I would say that for me though, Ramsay's interview is far more entertaining precisely *because* he loses his shit so much. Seeing guests go nuts is one of the main reasons I love the show, so when someone comes on and is totally unfazed, it's sort of disappointing for me. Seeing others go absolute apeshit as the sauces get hotter is amazing for me, seeing them in this extremely vulnerable and agitated state lol

I remember watching the food channel when it was just a chef making a specific dish in his/her kitchen, talking about how to make the dish. Nothing special whatsoever, other than the amazing food and skill needed to make them. It was the mid-90s. Before even Alton.

As far as anyone would be concerned in this thread, he is a chef who knows a lot about the science behind cooking. You said that he was “invited to talk about his craft.” That would mean he talks about what he does as a job; however, it doesn’t mean to go off topic and examine the food. Examining the food he is eating is not talking about his craft.

It's like you lot have never heard of Alton Brown, or know anything about him. So no, no it is not flexing, good or bad--they asked him on the show knowing exactly what they were getting--if they wanted someone to just give commentary on the food, well, they could ask any TV chef. They wanted a deeper dive, so they asked a Culinary *Master* on the show. Tired of the debate though. You lot either don't know who he is, or don't care, and I'm muting the thread at this point. You can call it whatever the hell you like--you're absolutely wrong, it is *not* flexing. At all. Again, invite someone who is the peak of their craft on to talk about their craft, and call it flexing? No. No, that's not what it is. Good day.

As a nutrition major I can very much understand when Alton's talking about watching people buy crap making him sad. Although I'd like to point out that there are ways to take some of the cheap shitty items out there and make reasonably healthy meals. Ramen for example, you can saute some onion and garlic in a pot, add stock (any kind of meat stock or vegetable stock you like), ginger (fresh grated or ground), soy sauce, diced carrots, bamboo shoots, water chestnuts, and the noodles (toss out the "flavor packet"); simmer for about 12-15 minutes, add bok choy and let that just begin to wilt; garnish with green onion and serve with a soft cooked egg (or hard boiled if you prefer); add some peppers if you want to add a bit of heat to it.
